For the Shrimp:

1 pound large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Zucchini Noodles:

4 medium zucchinis, spiralized

1 tablespoon olive oil

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese (optional)

Instructions
 

Prepare the Zucchini Noodles:

    - Using a spiralizer, turn the zucchinis into noodles. Set aside.

      - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spiralized zucchini, season with salt and pepper, and sauté for about 2-3 minutes until slightly tender. Remove from the skillet and set aside.

        Cook the Shrimp:

          - In the same skillet, add the remaining 3 tablespoons of olive oil. Heat over medium-high heat.

            - Add the minced garlic and sauté for about 30 seconds, until fragrant.

              - Add the shrimp to the skillet along with lemon zest, lemon juice, red pepper flakes, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.

                Combine:

                  - Add the zucchini noodles back into the skillet with the shrimp. Toss gently to combine and heat through for an additional 1-2 minutes.

                    Serve:

                      - Plate the lemon garlic shrimp over the zucchini noodles.

                        - Garnish with freshly chopped parsley and grated Parmesan cheese if desired. Serve immediately.
