Lemon Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust for your spice preference)

Salt and pepper, to taste

Juice of 1 lemon (about 3 tablespoons)

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

½ cup diced cucumber

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

½ cup hummus (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: On a baking sheet, spread the drained chickpeas. Drizzle with olive oil, and then sprinkle with paprika, garlic powder, cayenne pepper, salt, and pepper. Toss until the chickpeas are well coated.

      Roast Chickpeas: Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until the chickpeas are crispy and golden brown.

        Mix Dressing: In a small bowl, whisk together the lemon juice, a pinch of salt, and a drizzle of olive oil. This will be your light dressing for the wraps.

          Assemble the Wraps: On each tortilla, spread a generous layer of hummus. Top with fresh spinach, roasted chickpeas, diced cucumber, cherry tomatoes, and red onion.

            Drizzle Dressing: Drizzle the lemon dressing over the vegetables generously.

              Wrap it Up: Roll the tortilla tightly, folding in the sides as you go to secure the filling. Slice in half if desired.

                Serve: Garnish with chopped parsley and serve immediately, or wrap in foil for an on-the-go meal.
