1 cup quinoa, rinsed

2 cups water or vegetable broth

1 orange, zested and juiced

1 lemon, zested and juiced

1 lime, zested and juiced

1 tablespoon olive oil

1 teaspoon honey or maple syrup (optional)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and absorbs the liquid. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.

    Prepare the Citrus Dressing: In a small mixing bowl, whisk together the orange juice, lemon juice, lime juice, zest of all three citrus fruits, olive oil, honey (if using), sea salt, and black pepper until well combined.

      Combine the Ingredients: In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, and cilantro. Pour the citrus dressing over the salad and toss gently to coat all the ingredients.

        Add Avocado and Cheese: Just before serving, gently fold in the diced avocado and crumbled feta cheese, if using. Adjust seasoning to taste with additional salt and pepper, if needed.
