1 avocado, diced

1 cup cherry tomatoes, quartered

½ cup corn kernels (fresh or frozen)

1 jalapeño, thinly sliced (optional)

1 small red onion, diced

1 cup baby spinach

½ teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

¼ cup crumbled feta or queso fresco (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare Black Beans: In a small pot over medium heat, combine the black beans, cumin, smoked paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally until warmed through. If desired, mash some beans with a fork for a creamier texture.
