Ingredients

2 cups all-purpose flour

1/2 cup brown sugar

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice, left to sit for 5 minutes)

2 cups fresh peaches, peeled and chopped (about 3 medium peaches)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup coarse sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until combined.

Combine Wet Ingredients: In a separate medium bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth and homogenous.

Fold in Peaches: Add the chopped peaches into the wet ingredients, mixing gently to coat them.

Combine Dry and Wet Mixtures: Pour the wet ingredients into the dry ingredients, and stir until just combined. Be careful not to overmix! If you’re adding nuts, fold them in at this point.

Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. If desired, sprinkle the tops with coarse sugar for a sweet crunch.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

Cool Down: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve & Enjoy: These delightful peach muffins are perfect for lunch boxes! Enjoy them warm or at room temperature.
