1 red bell pepper, diced

1/2 red onion, finely chopped

1 jalapeño pepper, seeds removed and minced (adjust for heat preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper, to taste

Optional: 1 avocado, diced

Instructions

Prepare the Ingredients: Wash and dice the mangoes, red bell pepper, and jalapeño. Finely chop the red onion and cilantro.

Combine Salsa Ingredients: In a large mixing bowl, combine the diced mangoes, black beans, red bell pepper, red onion, jalapeño, and cilantro.

Add Seasoning: Squeeze the lime juice over the mixture. Sprinkle in the ground cumin, and season with salt and pepper. Carefully mix everything together until well combined.

Taste and Adjust: Taste the salsa and adjust seasonings to your liking, adding more lime juice, salt, or pepper as needed.

Chill: For the best flavor, cover the bowl with plastic wrap and let the salsa chill in the refrigerator for at least 30 minutes before serving.

Serve: Just before serving, gently fold in the diced avocado (if using) to prevent browning. Enjoy your mango black bean salsa with tortilla chips or as a vibrant topping for grilled chicken or fish!
