2 ripe mangoes, peeled and chopped

2 ripe peaches, pitted and chopped

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon lemon juice

1 teaspoon ground cinnamon (optional)

A pinch of salt

Prepare the Fruit: Begin by washing the mangoes and peaches thoroughly. Peel the mangoes, remove the pits from the peaches, and chop both fruits into small pieces.

    Blend: In a blender or food processor, combine the chopped mangoes, peaches, honey or maple syrup, lemon juice, ground cinnamon (if using), and salt. Blend until you have a smooth puree.

      Taste and Adjust: Taste the fruit puree and adjust sweetness if necessary by adding more honey or maple syrup.

        Prepare the Baking Tray: Preheat your oven to the lowest temperature setting, usually around 140°F to 170°F (60°C to 75°C). Line a baking tray or a rimmed baking sheet with parchment paper, ensuring that the paper extends over the edges for easy removal.

          Spread the Puree: Pour the fruit puree onto the prepared baking tray. Use a spatula or the back of a spoon to spread it evenly, aiming for about 1/8 inch thick for the best results.

            Drying Process: Place the tray in the preheated oven. Leave the door slightly ajar to allow moisture to escape. Dry the fruit leather for 6 to 8 hours, checking periodically. The fruit leather is finished when it feels dry to the touch and peels away easily from the parchment paper but is still slightly tacky.

              Cool and Cut: Once done, remove the tray from the oven and allow the fruit leather to cool completely on a wire rack. Once cooled, peel it off the parchment paper and cut it into strips or squares.

                Storage: Roll the strips in parchment paper and store in an airtight container at room temperature for up to 2 weeks, or refrigerate for longer shelf life.
