Ingredients

For the Salsa:

1 ripe mango, diced

1 cup strawberries, hulled and diced

½ red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice preference)

1 lime, juiced

¼ cup fresh cilantro, chopped

Salt to taste

For the Nachos:

1 bag of tortilla chips (about 10 oz)

1 cup shredded mozzarella cheese (or your preferred cheese)

½ cup black beans, rinsed and drained

½ cup corn (frozen, canned, or fresh)

Optional toppings: sour cream, avocado slices, pickled jalapeños, or extra cilantro for garnish

Instructions

Prepare the Salsa: In a medium bowl, combine diced mango, strawberries, red onion, and jalapeño. Gently mix to combine.

Add Flavor: Squeeze fresh lime juice over the salsa and add chopped cilantro. Sprinkle with a little salt. Stir until everything is well combined and set aside to allow the flavors to meld.

Preheat Oven: Preheat your oven to 350°F (175°C).

Build the Nachos: On a large baking sheet, spread an even layer of tortilla chips. Generously sprinkle shredded mozzarella over the chips, then add black beans and corn evenly across the top.

Bake: Place the nachos in the preheated oven and bake for about 8-10 minutes, or until the cheese is melted and bubbling.

Top with Salsa: Remove the nachos from the oven and carefully spoon the mango-strawberry salsa over the warm nachos.

Garnish: If desired, add dollops of sour cream, slices of avocado, pickled jalapeños, or extra cilantro for a vibrant finish.

Serve Immediately: Enjoy your freshly made Mango Strawberry Salsa Nachos while the cheese is melty and the salsa is fresh!
