Mango & Tofu Salad Bowl

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

2 ripe mangoes, diced

2 cups mixed salad greens (arugula, spinach, and baby kale)

1 red bell pepper, thinly sliced

½ cucumber, thinly sliced

¼ cup red onion, thinly sliced

1 avocado, diced

¼ cup fresh cilantro, chopped

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

2 tablespoons lime juice

1 tablespoon honey or agave syrup (optional)

1 teaspoon grated ginger

Salt and pepper to taste

Chopped peanuts or cashews for topping (optional)

Lime wedges for garnish

Instructions
 

Prepare the Tofu:

    - Slice the pressed tofu into 1-inch cubes.

      - In a medium bowl, whisk together sesame oil, soy sauce, lime juice, honey (if using), and grated ginger.

        - Add the tofu cubes and marinate for at least 15 minutes.

          Cook the Tofu:

            - Heat a non-stick skillet over medium-high heat. Add the marinated tofu and sauté until golden brown on all sides, about 8-10 minutes. Remove from heat and let cool slightly.

              Prepare the Salad:

                - In a large salad bowl, combine the mixed greens, diced mangoes, sliced red bell pepper, cucumber, red onion, avocado, and cilantro.

                  Combine and Dress:

                    - Add the sautéed tofu to the salad bowl. Drizzle with any remaining marinade and toss gently to mix all the ingredients evenly.

                      Serve:

                        - Season the salad with salt and pepper to taste. Top with chopped peanuts or cashews for an added crunch, if desired.

                          - Serve the salad immediately in bowls, garnished with lime wedges.
