1 pound (450g) of carrots, peeled and cut into uniform sticks or rounds

2 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 clove garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and black pepper to taste

Fresh parsley or thyme for garnish (optional)
