Maple Glazed Roasted Chestnuts

Ingredients
  

1 lb fresh chestnuts (preferably, fresh, not pre-packaged)

1/4 cup pure maple syrup

2 tbsp unsalted butter, melted

1 tsp cinnamon

1/2 tsp sea salt

1/4 tsp ground nutmeg

1/4 cup water

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chestnuts: Rinse the chestnuts under cold water. Using a sharp knife, make a small X incision on the flat side of each chestnut. This allows steam to escape during roasting and makes peeling easier afterward.

      Roast the Chestnuts: Place the chestnuts on a baking sheet in a single layer and roast in the preheated oven for about 20-25 minutes, or until the shells begin to open and the nuts are tender. Shake the pan halfway through for even roasting.

        Make the Glaze: While the chestnuts are roasting, combine the maple syrup, melted butter, cinnamon, sea salt, and nutmeg in a medium bowl. Stir well to combine into a smooth glaze.

          Glaze the Chestnuts: After removing the chestnuts from the oven, add them to a large mixing bowl. Pour the maple glaze over the hot chestnuts and toss gently to coat each chestnut evenly.

            Finish Roasting: Return the glazed chestnuts to the baking sheet and bake for an additional 10 minutes, allowing the glaze to caramelize slightly. A good indication of readiness is a fragrant aroma filling your kitchen.

              Serve: Allow the maple glazed chestnuts to cool for about 5 minutes before serving. Garnish with fresh thyme leaves if desired for an extra touch of flavor and presentation. Serve warm.
