Maple Sweet Potato Breakfast Hash

2 medium sweet potatoes, peeled and diced

1 medium red bell pepper, chopped

1 small red onion, diced

2 cups fresh spinach, roughly chopped

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 tablespoon maple syrup

4 large eggs

Fresh parsley, for garnish (optional)

Hot sauce, for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and sprinkle with smoked paprika. Cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and starting to brown.

    Add the Vegetables: Once the sweet potatoes are tender, add the diced red onion and chopped red bell pepper to the skillet. Cook for another 5-7 minutes, stirring often, until the vegetables are vibrant and softened.

      Incorporate Spinach: Stir the chopped spinach into the skillet and cook until wilted, about 2-3 minutes. Reduce the heat to low and drizzle the maple syrup over the mixture, stirring to combine. Taste and adjust seasoning, if necessary.

        Cook the Eggs: In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Crack in the eggs and cook to your desired level of doneness (sunny side up, over-easy, etc.).

          Assemble the Hash: Divide the sweet potato hash among four plates. Top each serving with a cooked egg and garnish with freshly chopped parsley, if using.

            Serve: Drizzle additional maple syrup over the dish if desired, and serve with hot sauce for an extra kick.
