2 large chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1/2 cup chicken broth

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

8 ounces fettuccine or pasta of choice

2 cups fresh spinach

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from heat, let rest for a minute, then slice into strips.

      Make the Sauce: In the same skillet, add the minced garlic and red pepper flakes. Sauté until the garlic is fragrant (about 30 seconds).

        Add Sun-dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 1-2 minutes.

          Create the Cream Sauce: Pour in the heavy cream and chicken broth, and stir to combine. Add Italian seasoning and bring the mixture to a light simmer. Allow cooking for 3-4 minutes until it slightly thickens.
