4 fillets of white fish (such as snapper or cod)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 lemon, juiced and zested

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/4 cup capers, rinsed and drained

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Lemon wedges, for serving

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the marinade: In a small bowl, mix together the olive oil, oregano, thyme, lemon juice, lemon zest, minced garlic, salt, and pepper. This mixture will infuse flavor into the fish.

      Marinate the fish: Place the fish fillets in a shallow baking dish and pour the marinade over them, ensuring they are well-coated. Let it marinate for about 15-20 minutes to absorb the flavors.
