8 oz. rotini pasta

2 cups corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1/2 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 lime, juiced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: jalapeño, diced for extra heat

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prepare the Corn: If using fresh corn, you can grill or sauté the corn kernels for extra flavor. If using frozen, simply thaw them. For canned corn, drain and rinse under cold water.

      Mix the Dressing: In a small bowl, whisk together lime juice, olive oil, chili powder, smoked paprika, salt, and pepper until well combined.
