Ingredients

1 cup fresh broccoli florets, chopped finely

1 cup sharp cheddar cheese, shredded

½ cup cooked bacon, crumbled

½ cup cream cheese, softened

½ cup breadcrumbs

2 tablespoons green onions, finely chopped

1 clove garlic, minced

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

1 large egg, beaten

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

Prepare the Broccoli Mixture: In a large mixing bowl, combine the finely chopped broccoli, shredded cheddar cheese, crumbled bacon, softened cream cheese, breadcrumbs, chopped green onions, minced garlic, smoked paprika, black pepper, and salt. Mix until fully incorporated.

Add the Egg: Stir in the beaten egg to help bind the mixture together. Ensure all ingredients are well combined.

Form the Rounds: Using a tablespoon or your hands, scoop out portions of the mixture and shape them into small rounds or patties, about 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and crispy. Keep an eye on them; you want the edges to turn a nice light golden color.

Serve: Remove the mini rounds from the oven and allow them to cool for a couple of minutes before transferring them to a serving platter. They can be enjoyed warm or at room temperature.

Optional Garnish: For an extra touch, garnish with a sprinkle of additional chopped green onions or a drizzle of ranch dressing before serving.
