Mini BBQ Veggie Tostada Bites

12 mini tostada shells

1 cup cooked black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small zucchini, diced

1 small red onion, diced

1 avocado, diced

1 cup shredded cheddar cheese (or dairy-free alternative)

1 cup BBQ sauce (your choice, or homemade)

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Veggies: In a mixing bowl, combine the diced red bell pepper, zucchini, and red onion. Drizzle with a bit of olive oil, and sprinkle with garlic powder, chili powder, salt, and pepper. Toss until evenly coated.

      Roast the Veggies: Spread the seasoned vegetables on a baking sheet and roast them in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized, stirring halfway through.

        Mix the Filling: In a large bowl, combine the roasted vegetables, black beans, corn, diced avocado, and half of the BBQ sauce. Mix gently, being careful not to mash the avocado.

          Assemble the Tostada Bites: Arrange the mini tostada shells on a platter. Spoon the veggie filling into each shell, generously filling them. Drizzle the remaining BBQ sauce over the top of each filled tostada.

            Add Cheese and Bake: Sprinkle the shredded cheese over each tostada and place them back in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
