Ingredients
  

4 small flour tortillas

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers (any color)

1/4 cup diced onion

1/4 cup cooked and crumbled breakfast sausage (optional)

2 tablespoons fresh cilantro, chopped

Salt and pepper, to taste

Olive oil, for cooking

Salsa and sour cream, for dipping

Instructions
 

Prepare the Filling: In a bowl, whisk together the eggs, salt, and pepper. Stir in the diced bell peppers, onions, sausage (if using), and cilantro until well combined.

    Cook the Egg Mixture: Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Pour in the egg mixture and cook, stirring gently, until just set but still slightly soft, about 3-4 minutes. Remove from heat and let it cool slightly.

      Assemble the Quesadillas: Place a tortilla on a clean surface. Spoon a generous amount of the egg mixture onto half of the tortilla, sprinkle with shredded cheddar cheese, and then fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas and filling.

        Cook the Quesadillas: In the same skillet, add a little more olive oil and heat over medium heat. Cook each quesadilla for about 2-3 minutes on each side, or until golden brown and the cheese has melted. Remove from the skillet and let them cool slightly.

          Cut and Serve: Slice each quesadilla into wedges and arrange them on a platter. Serve warm with salsa and sour cream on the side for dipping.
