1 cup buttermilk

2 large eggs

1/4 cup melted butter

Cooking spray (for the waffle iron)

6 large eggs

1/2 cup shredded cheddar cheese

1/2 cup cooked and crumbled breakfast sausage or diced ham

1/4 cup chopped green onions

Salt and pepper to taste

Fresh salsa (for serving)

Preheat the Waffle Iron: Begin by preheating your waffle iron according to the manufacturer’s instructions.

    Prepare the Waffle Batter: In a medium bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the buttermilk, eggs, and melted butter. Combine the wet and dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
