2 cups broccoli florets, steamed and chopped

2 medium-sized russet potatoes, peeled and cubed

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (panko for extra crunch)

1 tablespoon olive oil

Optional: 1/4 teaspoon red pepper flakes for a kick

Cooking spray or extra oil for baking

Instructions
 

Prepare the Potatoes: In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 10-12 minutes. Drain and let them cool slightly.

    Mash Potatoes: In a large mixing bowl, mash the cooked potatoes until smooth. Allow to cool for a few minutes, then stir in the steamed and chopped broccoli.

      Combine Ingredients: Add the shredded cheddar cheese, cream cheese, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) to the bowl. Mix well until everything is thoroughly combined and cheese is evenly distributed.

        Form the Poppers: Preheat your oven to 400°F (200°C). Using your hands, take a small amount of the mixture (about a tablespoon) and form it into small balls or patties. Continue until the mixture is used up.

          Coat with Breadcrumbs: In a shallow dish, spread out the breadcrumbs. Roll each popper in the breadcrumbs to coat completely, and place them on a baking sheet lined with parchment paper.
