Ingredients

1 package of refrigerated pie crusts (2 crusts)

1 can (21 oz) of cherry pie filling

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon sugar (for sweetness)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Powdered sugar (for dusting, optional)

Fresh cherries (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a mini muffin tin with paper liners or spray with non-stick cooking spray.

Prepare the Filling: In a mixing bowl, combine the cherry pie filling, cornstarch, lemon juice, vanilla extract, and sugar. Gently mix to ensure the cornstarch is well distributed and everything is well combined. Set aside.

Roll Out the Pie Crusts: On a lightly floured surface, roll out the refrigerated pie crusts one at a time. Use a round cookie cutter or the top of a glass to cut circles approximately 3 inches in diameter.

        Assemble the Bites:

          - Place each round of dough into the mini muffin tin, gently pressing it down to shape the bottom and sides of the crust.

            - Fill each crust with about 1 tablespoon of the cherry filling, being careful not to overfill.

              Create the Top Crust:

                - If desired, cut out small shapes (like stars or hearts) from the remaining pie crust or use another round of dough to place over the fillings. This step is optional, but it adds a cute touch to the pies.

                  - If covering with additional dough, ensure to cut slits in the top to allow steam to escape.

Prepare the Egg Wash: In a small bowl, whisk together the egg and milk. Brush this egg wash over the top of each mini pie to give them a golden finish.

Bake: Place the mini muffin tin in the preheated oven and bake for 15-20 minutes, or until the crusts are golden brown and the cherry filling is bubbly.

Cool and Serve: Once baked, remove the mini pie bites from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. If desired, dust with powdered sugar and garnish with fresh cherries before serving.

Enjoy: Serve these delightful mini cherry pie bites at gatherings, as a dessert, or simply for a sweet treat!
