Ingredients

1 cup cooked chicken breast, shredded

1 cup marinara sauce (your favorite brand)

1 teaspoon Italian seasoning

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

4 large flour tortillas

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Instructions

Prep the Chicken Mixture: In a mixing bowl, combine the shredded chicken, marinara sauce, Italian seasoning, mozzarella, and Parmesan cheese. Season with salt and pepper to taste. Mix until well combined.

Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spread a generous layer of the chicken mixture on one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this process with the remaining tortillas and filling.

Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 2-3 minutes on each side, or until they are golden brown and the cheese has melted. Add more oil as necessary for additional quesadillas.

Cut into Bites: Once the quesadillas are cooked, remove them from the skillet and let them cool slightly. Using a pizza cutter or sharp knife, cut each quesadilla into small bite-sized triangles.

Serve: Arrange the mini quesadilla bites on a serving platter. You can also serve alongside extra marinara sauce for dipping and garnish with fresh basil leaves if desired.

Enjoy!: These mini chicken parm quesadilla bites are perfect for parties, appetizers, or a fun weeknight snack!
