Mini Chicken Parmesan Garlic Knots

1 lb (450g) boneless, skinless chicken thighs, diced

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup marinara sauce (plus extra for serving)

1 tbsp Italian seasoning

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 package (13.8 oz) refrigerated pizza dough

2 tbsp unsalted butter, melted

2 cloves garlic, minced

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large skillet, cook the diced chicken thighs over medium heat. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook until the chicken is browned and fully cooked (about 7-10 minutes). Remove from heat and stir in the marinara sauce.

      Prepare the Pizza Dough: Roll out the pizza dough on a lightly floured surface into a rectangle about ¼ inch thick. Cut the dough into strips approximately 1 inch wide.

        Assemble the Garlic Knots: Take a strip of pizza dough and place a spoonful of the chicken mixture at one end. Sprinkle some mozzarella cheese and a little Parmesan cheese on top. Roll the dough tightly towards the other end, forming a log and pinch the ends to seal. Then twist the rolled log into a knot shape.

          Add Garlic Butter: In a small bowl, mix the melted butter with the minced garlic. Brush this mixture over each garlic knot for extra flavor.

            Bake the Knots: Place the garlic knots on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until golden brown and cooked through.

              Final Touch: Remove from the oven, drizzle with additional melted butter if desired, and sprinkle the remaining Parmesan cheese over the top while the knots are still warm.

                Serve: Serve warm with a side of marinara sauce for dipping, and garnish with fresh basil leaves if using.
