Mini Egg and Avocado Toast Rounds

4 slices of sourdough bread (or whole grain bread)

2 ripe avocados

4 large eggs

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

2 tablespoons fresh lemon juice

Fresh herbs for garnish (such as parsley or chives)

Instructions
 

Prepare the Avocado Mixture:

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, pepper, and red pepper flakes (if using). Mash with a fork until creamy but slightly chunky. Set aside.

      Toast the Bread:

        Preheat a non-stick skillet or griddle over medium heat. Lightly brush the sourdough slices with olive oil on both sides. Toast them in the pan for about 2-3 minutes per side or until golden brown and crispy. Remove from the heat and let cool slightly.

          Cook the Mini Eggs:

            In the same skillet, reduce the heat to low and crack the eggs into the pan. Cook them sunny-side up or over-easy according to your preference, approximately 3-4 minutes until the whites are set but the yolks still runny. Season with a pinch of salt and pepper while they cook.

              Assemble the Toast Rounds:

                Once the bread is toasted and slightly cooled, spread a generous layer of the mashed avocado mixture on each slice. Top each toast with a cooked egg.
