Mini Grilled Veggie Bruschetta Toasts

Ingredients
  

1 French baguette, sliced into 1/2-inch pieces

1 medium zucchini, sliced into thin rounds

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

3 tablespoons extra virgin olive oil

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (plus extra for garnish)

Salt and pepper, to taste

4 ounces fresh mozzarella cheese, diced or sliced (optional)

Instructions
 

Preheat the Grill: Heat an outdoor grill or grill pan over medium-high heat.

    Prepare the Vegetables: In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, and red onion. Drizzle 2 tablespoons of olive oil, balsamic vinegar, garlic, oregano, salt, and pepper. Toss well to coat the veggies evenly.

      Grill the Veggies: Place the vegetable mixture on the grill and cook for about 8-10 minutes, turning occasionally until they are tender and have nice grill marks. Remove from the grill and let cool slightly.

        Grill the Baguette Slices: Brush the baguette slices with the remaining olive oil and grill them for about 1-2 minutes on each side, or until they are golden and crispy.

          Assemble the Bruschetta: Once the vegetables are cool, mix in the fresh basil and chopped mozzarella (if using). Top each toasted baguette slice with a generous spoonful of the grilled veggie mixture.

            Garnish and Serve: Drizzle with a little extra olive oil, sprinkle with salt, pepper, and fresh basil for garnish. Serve warm or at room temperature.
