Mini Hash Brown Breakfast Bites

Ingredients
  

3 cups grated russet potatoes (about 3 medium potatoes)

1/2 cup finely chopped onion

1/2 cup shredded cheddar cheese

2 large eggs, beaten

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Cooking spray or olive oil for greasing

Optional toppings: sour cream, chives, or hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Rinse the grated potatoes under cold water to remove excess starch. Drain well and then pat dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

      Mix Ingredients: In a large mixing bowl, combine the grated potatoes, chopped onion, shredded cheddar cheese, beaten eggs, flour, garlic powder, paprika, salt, and black pepper. Mix until all ingredients are evenly incorporated.

        Grease the Muffin Tin: Lightly spray a mini muffin tin with cooking spray or brush it with olive oil to prevent sticking.

          Fill the Muffin Tin: Spoon the potato mixture into each muffin cup, filling them about 3/4 full. Press down gently to compact the mixture.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the bites are golden brown and crispy on the edges.

              Cool and Remove: Once baked, remove the muffin tin from the oven and let the bites cool for a few minutes. Use a fork or a small spoon to carefully pop out the mini hash brown bites.

                Serve: Serve warm with optional toppings such as sour cream, chives, or a dash of hot sauce for extra flavor! Enjoy!
