Ingredients
  

1 package of phyllo dough cups (store-bought or homemade)

1 cup cherry tomatoes, quartered

1 cup baby spinach, chopped

1 small zucchini, diced

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup feta cheese, crumbled

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté until fragrant (about 30 seconds). Add the cherry tomatoes, zucchini, red bell pepper, red onion, and baby spinach. Cook for 5-7 minutes, stirring occasionally, until vegetables are softened. Season with oregano, thyme, salt, and black pepper.

      Combine Cheeses: In a large mixing bowl, combine the sautéed veggies, crumbled feta cheese, and shredded mozzarella cheese. Mix until evenly distributed.

        Fill Phyllo Cups: Arrange phyllo dough cups on a baking sheet. Spoon the veggie and cheese mixture into each cup, filling generously.

          Bake: Place the filled cups in the preheated oven and bake for 15-20 minutes, or until the cheese is melty and the tops are golden brown.

            Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves if desired. Serve warm.
