Mini Pita Pizzas with Zaatar Chicken

For the Zaatar Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons zaatar spice blend

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

For the Mini Pita Pizzas:

4 whole wheat mini pitas

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

Fresh basil leaves for garnish

Optional: Crushed red pepper flakes for added heat

Marinate the Chicken: In a bowl, combine the chicken breasts with zaatar spice, olive oil, lemon juice, salt, and pepper. Ensure the chicken is well-coated. Cover and marinate for at least 30 minutes, or overnight for deeper flavor.

    Cook the Chicken: Preheat your grill or skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked through and internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing it into thin strips.

      Prepare the Pita Bases: Preheat the oven to 375°F (190°C). Place the mini pitas on a baking sheet lined with parchment paper.

        Assemble the Mini Pitas: Spread a generous spoonful of marinara sauce on each mini pita. Top with shredded mozzarella cheese, followed by the sliced Zaatar chicken, cherry tomatoes, olives, and red onion.

          Bake: Place the assembled mini pitas in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the pitas are slightly golden.
