Mini Roasted Pepper Chicken Wraps

2 large chicken breasts, grilled and sliced

1 cup mini sweet peppers, roasted and sliced

1 cup baby spinach leaves, washed and dried

1 cup feta cheese, crumbled

4 large whole wheat or spinach tortillas

1/2 cup hummus (any flavor you prefer)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

Fresh basil leaves for garnish (optional)

Prepare the Chicken: Season the grilled chicken slices with olive oil, salt, pepper, and smoked paprika. Set aside to enhance the flavors.

    Roast the Peppers: If using raw mini sweet peppers, preheat your oven to 400°F (200°C). Slice the mini peppers in half, remove seeds, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast for about 20 minutes or until they are tender and slightly charred. Let cool and then slice.

      Warm the Tortillas: In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side to make them more pliable.

        Spread the Hummus: Lay each tortilla flat and spread a generous layer of hummus over each.

          Assemble the Wraps: On each tortilla, layer the spinach leaves, sliced grilled chicken, roasted mini peppers, and crumbled feta cheese.
