1 packet taco seasoning (1 oz)

1 cup black beans (drained and rinsed)

1 cup corn (canned or frozen)

1 cup diced cherry tomatoes

1 cup shredded lettuce

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup salsa

1 package of mini tortilla cups (store-bought or homemade)

Fresh cilantro leaves for garnish (optional)

1 avocado, diced (optional)

Instructions
 

Prepare the Taco Filling: In a medium skillet, brown the ground beef (or turkey) over medium heat until fully cooked, about 5-7 minutes. Drain any excess fat. Stir in taco seasoning and a splash of water (about 1/4 cup) to help the seasoning adhere. Simmer for about 3-4 minutes until thickened. Remove from heat.

    Prepare the Veggies: In a separate bowl, mix together the black beans, corn, diced cherry tomatoes, and a pinch of salt and pepper. This will be your veggie mix.

      Assemble the Cups: Take your mini tortilla cups and start by placing a spoonful of the taco meat at the bottom of each cup. Top with a spoonful of the veggie mix.
