4 medium sweet potatoes

1 cup canned black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

¼ cup fresh cilantro, chopped

1 avocado, diced (for topping)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet and bake in the preheated oven for 45-50 minutes, or until they are fork-tender.

      Make the Filling: While the potatoes are baking, prepare the filling. In a medium bowl, combine the black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, salt, and pepper. Mix well to combine.

        Scoop Out the Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool for about 5-10 minutes. Carefully slice each potato in half lengthwise and scoop out a little of the flesh, leaving enough to maintain the structure for the boats.

          Fill the Sweet Potato Boats: Take the filling mixture and spoon it generously into each sweet potato half. Top each filled potato with a sprinkle of shredded cheese.

            Bake Again: Return the filled sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and slightly golden.

              Garnish and Serve: Remove the sweet potato boats from the oven and let them cool for a minute. Top each boat with diced avocado, a sprinkle of fresh cilantro, and serve lime wedges on the side for an added zest.
