Miso Glazed Eggplant

2 medium Japanese eggplants (or 1 large globe eggplant)

3 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon mirin (or rice vinegar)

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

Prepare the Eggplants: Slice the eggplants in half lengthwise. Score the flesh in a crisscross pattern, being careful not to cut through the skin. This helps the marinade penetrate and allows for even cooking.

    Make the Miso Glaze: In a bowl, whisk together the miso paste, soy sauce, sesame oil, mirin, honey (or maple syrup), minced garlic, and grated ginger until smooth and well combined.

      Marinate the Eggplants: Brush the miso glaze generously over the cut sides of the eggplants. Place them in a shallow dish and let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for deeper flavor.

        Preheat the Oven: Preheat your oven to 400°F (200°C).

          Roast the Eggplants: Place the marinated eggplants cut side up on a baking sheet lined with parchment paper. Roast in the oven for about 25-30 minutes, or until the eggplants are tender and slightly caramelized.

            Broil for a Finish (Optional): For an extra touch of char and caramelization, you can switch the oven to broil for the last 3-5 minutes. Keep an eye on them to prevent burning.

              Garnish and Serve: Remove the eggplants from the oven and sprinkle with sesame seeds, chopped green onions, and cilantro leaves if using. Serve warm as a delicious side dish or over rice as a main course.
