2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup unsulfured molasses

1 large egg

1 teaspoon vanilla extract

1/4 cup granulated sugar (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking soda, salt, ground ginger, cinnamon, and cloves until evenly mixed. Set aside.

      Cream Butter and Sugar: In a large bowl, using an electric mixer, beat the softened butter and brown sugar together on medium speed until light and fluffy, about 3-4 minutes.

        Add Molasses and Egg: Add the molasses, egg, and vanilla extract to the butter-sugar mixture. Beat until well combined.

          Mix Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring on low speed until just combined. Be careful not to overmix.

            Cool the Dough: Let the dough sit for about 10 minutes in the refrigerator to firm up slightly. This will help your cookies maintain their shape while baking.

              Shape Cookies: Scoop about 1 tablespoon of dough, roll it into a ball, and then roll it in granulated sugar. Place it on the prepared baking sheet, spacing them about 2 inches apart.

                Bake: Bake the cookies in the preheated oven for 8-10 minutes, or until they are set around the edges but still soft in the center. They will continue to firm up as they cool.
