Mongolian Ground Beef Noodles

1 lb (450g) ground beef

8 oz (225g) egg noodles

2 tablespoons vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1/2 cup soy sauce

2 tablespoons oyster sauce

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 red bell pepper, sliced thinly

1 cup green onions, chopped (reserve some for garnish)

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust to taste)

Sesame seeds for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to the package directions until al dente. Drain and set aside.

    Stir-fry the Beef: In a large skillet or wok over medium-high heat, add the vegetable oil. Once hot, add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.

      Add Aromatics: Add the chopped onion, garlic, and grated ginger to the pan and sauté for about 3 minutes, or until the onions become translucent.

        Create the Sauce: In a small bowl, combine the soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, black pepper, and red pepper flakes. Stir well until the brown sugar is dissolved.

          Mix Ingredients: Pour the sauce over the beef mixture in the skillet. Stir well to ensure the beef is evenly coated in the sauce. Add the sliced red bell pepper and half of the chopped green onions, stirring for another 2-3 minutes until the peppers are tender yet still crisp.

            Combine with Noodles: Add the drained egg noodles to the skillet. Toss everything together until the noodles are well coated with the sauce and heated through.

              Garnish and Serve: Remove from heat. Serve the Mongolian Ground Beef Noodles hot, garnished with reserved green onions and sesame seeds if desired.
