Mushroom Swiss Cheese Meatloaf

1 pound ground beef

1 cup finely chopped mushrooms (preferably cremini or button)

1 cup shredded Swiss cheese

1/2 cup breadcrumbs (preferably panko for added crunch)

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup ketchup (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy release.

    Sauté the Mushrooms and Onions: In a skillet over medium heat, add a drizzle of olive oil. Once the oil is hot, add the chopped onions and cook for about 2-3 minutes until translucent. Then, add the chopped mushrooms and continue to sauté until they've released their moisture and are browned, about 5-7 minutes. Remove from heat and allow to cool slightly.

      Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, sautéed mushroom and onion mixture, breadcrumbs, shredded Swiss cheese, grated Parmesan cheese, minced garlic, egg, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper. Mix until just combined; be careful not to overwork the meat mixture.

        Shape the Meatloaf: Transfer the mixture to the prepared loaf pan, evenly pressing it down and shaping it into a loaf.

          Add the Ketchup Topping: Spread the ketchup across the top of the meatloaf, smoothing it out evenly.

            Bake: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C) when checked with a meat thermometer.

              Rest and Garnish: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. This will help it set up and make slicing easier. Garnish with fresh parsley before serving.

                Serve: Slice the meatloaf and serve it warm with your favorite sides, like mashed potatoes, steamed vegetables, or a fresh salad.
