Ingredients

1 ½ cups graham cracker crumbs

⅓ cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups mixed berries (strawberries, blueberries, raspberries)

Additional berries for topping

Mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

Layer the Base: In 4-6 mason jars (depending on size), add about 3 tablespoons of the graham cracker mixture to the bottom of each jar. Press down lightly with the back of a spoon to form a crust layer.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using a hand mixer until it's smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

Whip the Cream: In another bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.

Layer the Cheesecake: Spoon the cheesecake filling on top of the graham cracker crust in each jar, filling them until about halfway full.

Add the Berries: Layer the mixed berries on top of the cheesecake filling. You can use a combination of sliced strawberries, whole blueberries, and raspberries for visual appeal.

Top with More Cheesecake: Add another layer of the cheesecake mixture on top of the berries, filling each jar to the top.

Decorate: Finish with a sprinkle of the remaining graham cracker crumbs, additional berries, and a mint leaf for garnish if desired.

Chill: Cover the jars with lids or plastic wrap and place them in the refrigerator for at least 2 hours to set, or overnight for best results.
