1 cup creamy peanut butter (natural, unsweetened is best)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup milk chocolate chips

1/4 cup coconut oil (or butter)

1/4 teaspoon sea salt (optional, for garnish)

Instructions
 

Prepare the Cupcake Liners: Line a muffin tin with paper cupcake liners. This recipe will make about 12 cups, so ensure your muffin tin accommodates that.

    Make the Peanut Butter Filling: In a medium bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Mix well with a spatula until the mixture is smooth and evenly combined. Set aside.

      Melt the Chocolate: In a small saucepan over low heat or using a microwave-safe bowl, melt the chocolate chips and coconut oil together. If using the microwave, heat in 30-second intervals, stirring in between, until fully melted and smooth.

        Add the First Layer of Chocolate: Spoon about 2 teaspoons of the melted chocolate into the bottom of each cupcake liner, gently spreading it to form an even layer. Place the muffin tin in the freezer for about 10 minutes to let the chocolate set.

          Add the Peanut Butter Layer: Once the chocolate is set, remove the muffin tin from the freezer and add about 1 tablespoon of the peanut butter mixture on top of the chocolate layer in each cup. Press it slightly down but avoid touching the bottom chocolate layer.

            Top with More Chocolate: Pour another 2 teaspoons of melted chocolate over the peanut butter layer in each cup, covering it completely. Use a spatula to smooth it out if necessary.

              Chill and Set: Sprinkle a tiny pinch of sea salt on top of each cup (optional). Return the muffin tin to the freezer and let the cups chill for at least 30 minutes, or until the chocolate is fully set and hard.
