1 cup almond flour

1/4 cup coconut flour

1/2 cup maple syrup or agave syrup

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup mini chocolate chips

1 cup dark or milk chocolate chips (for coating)

Optional toppings: crushed nuts, sea salt, or sprinkles

Instructions
 

Prepare the Cookie Dough: In a large mixing bowl, combine almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, and salt. Stir until fully combined and a dough forms. If the dough is too crumbly, add a teaspoon of water at a time to achieve the right consistency.

    Add Chocolate Chips: Fold in the mini chocolate chips until evenly distributed throughout the dough.

      Mold the Cups: Line a muffin tin with cupcake liners. Take a tablespoon of the cookie dough mixture and press it into the bottom and up the sides of each liner, leaving a small cavity in the center for the chocolate filling.

        Create the Chocolate Coating: In a microwave-safe bowl, melt the dark or milk chocolate chips in 30-second intervals, stirring between each, until completely smooth.

          Assemble the Cookie Dough Cups: Spoon melted chocolate into each lined muffin cup, covering the cookie dough completely. Tap the tin lightly on the countertop to remove air bubbles.
