Ingredients

1 cup fresh blueberries

1 cup lemon yogurt (Greek or regular)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 tablespoon lemon juice (freshly squeezed)

1 teaspoon lemon zest

1/2 teaspoon vanilla extract

1 cup crushed graham crackers (for the crust)

1/4 cup unsalted butter, melted

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the crust: In a medium bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Evenly divide this mixture among four serving cups or small dessert bowls, pressing it down firmly to form an even crust layer.

Make the filling: In a large mixing bowl, beat together the softened cream cheese and powdered sugar using a hand mixer until smooth and creamy. Add the lemon yogurt, lemon juice, lemon zest, and vanilla extract. Mix until fully combined and fluffy.

Layer the cups: Spoon the lemon yogurt mixture over the crust in each cup, filling them about three-quarters full. Smooth the tops with a spatula.

Add the blueberries: Gently fold the fresh blueberries into the remaining lemon filling, then distribute the blueberry-laden mixture evenly on top of each lemon yogurt layer.

Chill: Refrigerate the cups for at least 2 hours or until set. The chilling time allows the layers to firm up and the flavors to meld.

Serve: Once chilled, garnish each cup with a few extra blueberries and a mint leaf if desired. Serve cold and enjoy the refreshing burst of lemon and blueberry flavors!
