Ingredients

1 cup all-purpose flour (heat-treated for safety)

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

2 teaspoons vanilla extract

1 cup mini chocolate chips

1 cup crushed Oreo cookies (plus extra for topping)

1/2 cup cream cheese, softened

1/2 cup chocolate chips (for melting, optional for drizzling)

Instructions

Prepare the Flour: To ensure it's safe to eat raw, spread the all-purpose flour on a baking sheet and bake it at 350°F (175°C) for 5-7 minutes, stirring halfway. Let it cool.

Mix the Base: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes.

Add in Flavor: Blend in the vanilla extract and mix until combined.

Incorporate the Flour: Gradually add the heat-treated flour to the wet mixture, stirring well until fully incorporated. The mixture should be thick and dough-like.

Fold in the Goodies: Gently fold in the mini chocolate chips and crushed Oreo cookies until evenly distributed throughout the cookie dough.

Add Cream Cheese: Mix in the softened cream cheese until you achieve a smooth consistency. This will add richness and moisture to your bars.

Prepare the Pan: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.

Spread the Mixture: Pour your cookie dough mixture into the prepared pan. Use a spatula to evenly spread and press it down tightly.

Chill: Place the pan in the refrigerator and let it chill for at least 1-2 hours to firm up.

Optional Drizzle: If desired, melt the 1/2 cup of chocolate chips in a microwave-safe bowl in increments of 20 seconds, stirring in between until smooth. Drizzle over the top of the chilled cookie dough bars.

Add Topping: Sprinkle additional crushed Oreo cookies over the melted chocolate (if used) for a lovely finish.

Cut and Serve: Once chilled and firm, use the parchment overhang to lift the bars out of the pan. Cut them into squares and enjoy!
