Ingredients

1 ½ cups rolled oats

1 cup natural peanut butter (smooth or crunchy)

¾ cup honey or maple syrup

½ cup chocolate chips (dark or milk chocolate)

½ cup ground flaxseed (optional for added nutrition)

1 teaspoon vanilla extract

A pinch of sea salt

½ cup chopped nuts (walnuts, almonds, or your favorite)

Optional toppings: additional chocolate chips, shredded coconut, or dried fruits

Instructions

Prepare the Pan: Line an 8x8 inch (or similar size) square baking dish with parchment paper, leaving some paper hanging over the edges for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed (if using), sea salt, and chopped nuts. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, mix the natural peanut butter, honey (or maple syrup), and vanilla extract until smooth and well blended.

Combine Mixtures: Pour the wet mixture over the dry oat mixture. Stir everything together until all the oats are fully coated and the mixture is sticky.

Add Chocolate Chips: Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the mixture.

Press into the Pan: Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press it down firmly and evenly into the pan.

Chill: Place the dish in the refrigerator for at least 1-2 hours to firm up the bars. For quicker results, you can also pop them in the freezer for about 30 minutes.

Slice and Enjoy: Once set, lift the bars out of the dish using the parchment paper edges. Place on a cutting board and cut into bars or squares. Store the bars in an airtight container in the fridge for up to one week.
