Ingredients

For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1/2 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

For the S’mores Topping:

1 cup mini marshmallows

1/2 cup milk chocolate chips

1/4 cup crushed graham crackers

Optional: toasted marshmallows for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined. You should have a mixture that resembles wet sand. Spoon equal portions of the crust mixture into the bottom of each jar, pressing it down gently to create an even layer.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar and continue mixing until well combined. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate the whipped cream.

Assemble the Jars: Pipe or spoon the cheesecake filling on top of the crust layer in each jar, filling them about 3/4 full. Tap the jars gently on the counter to remove any air bubbles.

Add the Toppings: Evenly distribute the mini marshmallows on top of the cheesecake filling, followed by a sprinkle of crushed graham crackers and milk chocolate chips.

Toast the Marshmallows: For an authentic s'mores experience, use a kitchen torch to lightly toast the marshmallows until golden brown. Be cautious to not burn them. If you don’t have a torch, you can place the jars under a broiler for a minute or two, but watch closely to avoid burning!

Chill: Cover the jars with lids or plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the cheesecake to set.

Serve: When ready to serve, you can top with additional chocolate chips or more graham cracker crumbs, and for an extra touch, toast a marshmallow and place it on top of each jar.
