No-Bake Strawberry Cheesecake Bars

For the Crust:

1 cup crushed graham crackers

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Filling:

16 oz (two 8 oz packages) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and chopped

For the Topping:

1 cup fresh strawberries, sliced (for garnish)

Optional: mint leaves (for garnish)

Instructions
 

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand. Press the mixture evenly into the bottom of a greased 9x9-inch baking dish. Place in the refrigerator while you prepare the filling.

    Make the Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

        Add Strawberries: Gently fold in the chopped strawberries, being careful not to overmix.

          Assemble the Bars: Pour the strawberry cheesecake filling over the prepared crust and spread it evenly. Cover the dish with plastic wrap and refrigerate for at least 4 hours or until set (overnight is best if you can wait!).

            Serve: Once set, remove from the fridge and lift the cheesecake bars out of the dish using the parchment paper (if used). Slice into squares. Top with sliced strawberries and garnish with mint leaves if desired.
