Ingredients

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 cups fresh green beans, trimmed and halved

1 red bell pepper, sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (optional for umami flavor)

1 tablespoon sesame oil

1 tablespoon vegetable oil (for stir-frying)

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Sesame seeds and sliced green onions for garnish

Instructions

Prepare the Chicken: In a mixing bowl, season the sliced chicken with salt and pepper. Let it marinate for about 10 minutes to enhance the flavor.

Stir-Fry the Veggies: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the green beans and stir-fry for about 3-4 minutes until they start to become tender but still crisp. Remove them from the pan and set aside.

Cook the Chicken: In the same skillet, add the remaining tablespoon of oil. Once hot, add the marinated chicken and stir-fry for about 5-6 minutes, or until golden brown on the outside and cooked through.

Add Aromatics: Stir in the garlic, ginger, and red bell pepper, and cook for an additional 2 minutes until the veggies are tender-crisp and the aromas meld together.

Combine Ingredients: Return the green beans to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together to coat evenly.

Thicken the Sauce: Add the cornstarch mixture and stir well. Cook for 1-2 minutes until the sauce thickens and becomes glossy. Sprinkle red pepper flakes if you like some heat.

Finish and Serve: Taste and adjust seasonings if needed. Remove from heat, garnish with sesame seeds and sliced green onions. Serve hot over brown rice or quinoa for a complete meal.
