1 1/2 cups rolled oats

1 cup buttermilk

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 cup raisins or chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it with cooking spray.

    Prepare Oats: In a mixing bowl, combine the rolled oats and buttermilk, stirring well. Allow the mixture to sit for about 15-20 minutes to let the oats soak and soften.

      Mix Wet Ingredients: In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and well combined.

        Combine Mixtures: Once the oat mixture has soaked, add it to the wet ingredients and mix until thoroughly incorporated.

          Add Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add this dry mixture to the oats and wet ingredients, mixing just until combined. If you’re adding raisins, chocolate chips, or nuts, gently fold them in now.

            Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

                Cool: Once baked, remove the cupcakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
