1 lb ground beef

4 medium potatoes, peeled and thinly sliced

1 large onion, diced

2 cups cheddar cheese, shredded

1 can (10.5 oz) cream of mushroom soup

1 cup milk

2 cups frozen mixed vegetables (carrots, peas, corn)

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp dried thyme

2 tbsp olive oil or butter

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the ground beef to the skillet, breaking it apart with a wooden spoon, and cook until browned and cooked through. Drain any excess grease.

      Add Seasonings: Stir in the garlic powder, onion powder, salt, pepper, paprika, and thyme into the beef mixture. Combine well and cook for an additional minute to let the flavors meld, then remove from heat.

        Prepare the Sauce: In a mixing bowl, combine the cream of mushroom soup and milk. Whisk until smooth.

          Layer the Casserole: In a large baking dish, start layering the casserole. Begin with a layer of half the sliced potatoes, followed by half the cooked beef mixture, then half the frozen mixed vegetables. Pour half of the soup and milk mixture over this layer. Repeat with the remaining potatoes, beef, vegetables, and finish with the rest of the soup mixture.

            Add Cheese: Sprinkle the cheddar cheese evenly over the top of the casserole.

              Cover and Bake: Cover the casserole dish tightly with aluminum foil (to avoid steam escaping) and place it in the preheated oven. Bake for 45 minutes.

                Uncover and Finish Baking: After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                  Serve: Once the casserole is finished baking, remove it from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
