Ingredients

4 boneless, skinless chicken breasts (about 1.5 lbs)

Salt and black pepper, to taste

1 cup all-purpose flour

4 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

1/2 cup dry white wine (like Pinot Grigio)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon lemon juice

8 ounces fettuccine pasta (or pasta of your choice)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Chicken:

    - Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour, shaking off any excess.

      Cook the Chicken:

        - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the floured chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

          Make the Sauce:

            - In the same skillet, add the remaining olive oil and butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

              Deglaze the Pan:

                - Pour in the chicken broth and white wine. Stir and bring to a simmer, scraping up any brown bits from the bottom of the skillet. Let it cook for about 3 minutes to reduce slightly.

                  Add the Cream:

                    - Whisk in the heavy cream and let it simmer for another 2-3 minutes until the sauce thickens slightly. Stir in the Parmesan cheese and lemon juice, mixing until smooth and creamy.

                      Cook the Pasta:

                        - While the sauce is thickening, cook the fettuccine according to package instructions until al dente. Drain and set aside.

                          Combine Everything:

                            - Slice the cooked chicken breasts and add them back into the skillet with the sauce. Stir in the cooked fettuccine, tossing everything together to coat in the creamy sauce.

                              Serve:

                                - Plate your chicken scampi, and garnish with fresh parsley and additional grated Parmesan if desired. Serve with lemon wedges on the side.
