1 medium butternut squash (about 2 lbs), peeled and diced into 1-inch cubes

2 large apples (such as Granny Smith or Honeycrisp), cored and sliced

1 medium red onion, thinly sliced

3 tablespoons olive oil

1 tablespoon maple syrup or honey

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon salt

¼ teaspoon black pepper

½ cup dried cranberries (optional)

½ cup chopped pecans or walnuts (optional)

Fresh thyme or rosemary for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables and Fruits: In a large mixing bowl, combine the diced butternut squash, sliced apples, and red onion.
