Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb), trimmed

3 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper, to taste

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Sheet: Line a large rimmed baking sheet with parchment paper for easy cleanup.

Season the Asparagus: In a large bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper. Spread the asparagus in a single layer on one side of the prepared baking sheet.

Make the Sauce: In a small bowl, combine the remaining olive oil, minced garlic, lemon juice, zest, oregano, smoked paprika, salt, and pepper. Whisk until well mixed.

Prepare the Salmon: Place the salmon fillets on the other side of the baking sheet. Drizzle the lemon garlic sauce over the salmon, making sure it’s well coated.

Bake: Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender yet crisp. The internal temperature of the salmon should reach 145°F (63°C).

Serve: Remove from the oven, garnish with chopped parsley and serve with lemon wedges on the side for an extra citrusy kick.

Enjoy: Pair with a light salad or a side of quinoa for a complete meal!
