Ingredients

4 salmon fillets (6 oz each)

1 bunch of asparagus, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, combine 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper. Mix well to create a marinade.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-top bag. Pour half of the marinade over the salmon, ensuring each fillet is fully coated. Let it marinate for at least 15 minutes while you prepare the asparagus.

Prepare the Asparagus: On a large baking sheet, drizzle the remaining tablespoon of olive oil over the asparagus. Sprinkle with salt and pepper, and toss to coat evenly.

Arrange on Baking Sheet: Push the asparagus to one side of the baking sheet to make room for the salmon. Place the marinated salmon fillets on the other side, skin-side down.

Bake Everything Together: Bake the salmon and asparagus in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp.

Garnish and Serve: Once done, remove the baking sheet from the oven. Drizzle any remaining marinade over the salmon and asparagus. Garnish with fresh parsley and serve with lemon wedges on the side for an extra zesty touch.

Enjoy your delicious, healthy meal that's easy to make with minimal cleanup!
